物価高で変化ある?「節約レシピ」で今人気の食材 - 東洋経済オンライン

物価高が続く中、節約レシピが人気だ。「レシピブログ」などネット上でレシピサービスを提供するアイランドが発表する「トレンド料理ワード大賞」では、2022年の大賞が節約料理で、今年の上半期の調査でも、2位がありあわせを使う節約意図が高い「アルモンデ(あるもので作る料理)」だった。

「モヤシ」「カット野菜」の検索頻度が高い

クックパッドに節約レシピの動向を聞いてみた。すると、同社の食の検索データ「たべみる」で、「節約」というキーワードが検索されたピークは2015年で、その後は自分が求める特定のキーワードで検索する傾向が強くなったという。

特に人気が高い節約ワードは「モヤシ」。また、野菜価格が高騰した2018年、「カット野菜」の検索頻度が前年の約1.5倍に増えて定着した。2019年からは、テレビ番組でよく取り上げられる「業務スーパー」が検索されるようになり、2022年には2018年の約8倍まで伸びている。最近人気が高いのは、鶏手羽元や、買いだめできて安いタンパク源になるかにかまやはんぺんなどの練り物だ。

このように、物価高は食卓を直撃している。ネットを使えば、いくらでも節約レシピを検索できるが、特定の食材を使う料理で栄養バランスが崩れた日々が続くと、健康を損ねるリスクがある。節約レシピのトレンドから、食費の節約問題について考えてみよう。

47都道府県のスーパーやコンビニなど小売店7万3000店のチラシがネットで見られる「トクバイ」。現在は30~50代の子育て世代の女性を中心に、月に1600万人以上が利用するが、昨年10月ごろから「物価高で節約が大変です」「かなりしっかり各店の価格を比較して、計画的に買い物しないといけない」といった、切実な声が急激に増えてきた。

 女子栄養大(埼玉県坂戸市)食文化栄養学科の2、3年生5人が17日、高山村公民館で村産リンゴを使った新たなスイーツのレシピを作った。村は教育機関と連携した地域づくりを推進。同大では地場食材を使ったメニュー研究を授業に取り入れていることを知り、協力を依頼した。村はレシピを冊子にして配布し、リンゴのPRに生かす。

 レシピ作りでは、村の農家が栽培したシナノドルチェと紅玉を使用。学生は、パフェやケーキなどそれぞれ考えたレシピを基に調理した。味見をして「酸味が強いから甘くしよう」などと助言し合いながら計5品を完成させた。冊子向けに、出来上がったスイーツの写真も撮影した。

 3年の中嶋咲さん(20)は、1センチ角のリンゴとサツマイモを生地に包んで焼き上げたベーグルを作った。リンゴを大きめに切って口当たりを強くしたといい、「リンゴを食べる機会が増えればうれしい」と期待した。

 女子美術大(東京)名誉教授で、村地域おこし協力隊の羽太(はぶと)謙一さんが女子栄養大の取り組みに着目し、大学を通じて参加者を公募。村は年内に冊子を500~千部作り、村内の飲食店や旅館、商店などに置く予定だ。羽太さんは「引き続き連携し、他の食材を活用したレシピも作りたい」と話した。

今回のテーマ「時間があるときの料理」

パプリカの甘みが生むコク

 前回はササッとできるレシピを取り上げましたが、今回はその逆です。時間があるときに作ってみたいイタリアの家庭料理をご紹介します。材料、調味料や調理道具も普段お使いのものでOK。ちょうど連休でもありますし、挑戦してみてはいかがでしょう。

 塩コショウした鶏肉は、皮目からフライパンに入れて十分に焼き色をつけ、一旦取り出します。鶏のうまみが残ったフライパンで、続けてパプリカを焼いていきます。このパプリカが味のポイント。火を通すことで甘みが増し、鶏料理にコクが出るのです。パプリカが手に入らない場合は、肉厚のピーマンで代用しても構いません。

 鶏肉は、切らずにそのままフライパンに戻します。白ワインと白ワインビネガーを加え、ぴったりと閉じることができるフタをして弱火で20分ほど、蒸すような感じで煮ていきます。焦げないように途中何度か様子を見て、水分が減りすぎていたら適宜水を足すようにします。

 仕上げにバジルの葉をちぎって加え、サッと混ぜれば完成。材料も作り方も至ってシンプルですが、本格的な味が楽しめますよ。

材料

(2人分)

鶏もも肉 2枚

パプリカ 2個

ニンニク 2片

白ワイン 100㏄

白ワインビネガー 50㏄

バジル 1枝

オリーブ油 大さじ1/2

塩 少々

コショウ 少々

作り方

❶鶏肉に塩、コショウをする。パプリカは2センチ幅の棒状に切る。

❷フライパンにオリーブ油とニンニクを入れて熱し、鶏肉を焼く。きれいに焼き色がついたら取り出す。

❸同じフライパンにパプリカを入れ、塩1つまみ(分量外)を加えてじっくり焼く。

❹③に②を戻し白ワイン、白ワインビネガーを加え、フタをして20分ほどごく弱火で蒸し煮する。途中、様子を見て水分が減りすぎたら水を足す。

❺仕上げにバジルの葉をちぎって加え、サッと混ぜる。(1人前443キロカロリー)

よくある失敗は「豆腐が崩れてしまう」または「豆腐から衣がはがれてしまう」というもの。お店のフライヤーであれば豆腐が油につかっている状態をつくりやすく、崩れたり、衣がはがれたりするリスクを減らせますが、たくさんの油を使いづらい家庭では難しい手法です。

一般的なレシピではその解決策として崩れやすい絹ごし豆腐ではなく、もめん豆腐を使う場合もありますが、絹ごし豆腐のなめらかさは捨てがたいもの。そこで今回は絹ごし豆腐を使って上手に揚げるコツを伝授します。
